Maple Bacon Brussels Sprouts with Pomegranate Seeds

I love roasted Brussels sprouts any time of year, but these Maple Bacon Brussels Sprouts, inspired by Taylor Dadds of One Balanced Life, are my favorite! I've made a few festive tweaks to her original recipe by adding a pop of color and sweetness with pomegranate seeds.

The Perfect of Sweet and Savory

One of the reason this is such a delicious recipe is the combination of flavors. The smoky, savory crunch of bacon pairs perfectly with the natural sweetness of maple syrup and dates. Tips for the Best Brussels Sprouts

Choosing the right Brussels sprouts is key. Look for bright green sprouts that feel firm and have tight, compact leaves. If they’re on the larger side, like the ones I used, quartering them ensures they cook evenly and absorb all those delicious flavors. Cooking them in a cast iron skillet not only gives them a nice caramelized texture.

MAPLE BACON BRUSSELS SPROUTS WITH POMEGRANATE SEEDS


Prep time: 10 minutes

Cook Time: 25-30 minutes

Makes: 4-6 serving


INGREDIENTS

  • 3 slices chopped bacon (I use the uncured Sprouts brand)

  • 2 tsp minced garlic

  • 3 C of chopped Brussels sprouts (cut in halves or fourths, depending on size of sprouts). I use the Organic Brussels Sprouts from Costco

  • 1/4 C maple syrup

  • 1 C chopped walnuts

  • 1 C chopped dates

  • dash of sea salt


DIRECTIONS

  1. Fry bacon in cast iron skillet (a regular skillet works great too)

  2. On medium heat, add chopped Brussel sprouts and stir to coat in bacon grease

  3. Saute for 10-12 minutes, or until Brussel sprouts are tender and somewhat crispy

  4. Add maple syrup, dates and walnuts and stir to coat all ingredients with maple syrup

  5. Cook and continue to stir for 3-5 minutes

  6. Sprinkle in pomegranate seeds and stir around

  7. Enjoy!
