Note: For our kiddos, we substituted corn tortillas for the grain-free wraps.

We created our meal plans because sometimes (or a lot of times), it's extremely difficult to eat well, especially when you have a full schedule. Trust us, we know how tiresome and mundane it gets to decide "what's for dinner" and then, we opt for pizza for the fifth night in a row. Additionally, eating well matters--a lot! What we put in our body impacts everything--from our energy, skin, brain, muscles, bones, sleep, etc. etc. etc. We are what we eat and our meal plans are all higher in protein with complex carbohydrates, the good fat and all of the good stuff! Our goal is to take "what's for dinner" off of your plate so you can use your brain power for all 999 other important things you have going on in your life!





Easy Taco Tuesday Shrimp Taco Recipe

Prep time: 5 minutes

Cook time: 15 minutes

Serving size: 2


INGREDIENTS

  • 10 oz (284 g) raw medium shrimp, peeled and deveined

  • 1 garlic clove, pressed or minced

  • 1 tbsp (14 g) avocado oil

  • Dash of sea salt

  • Dash of black pepper

  • 1/4 tsp (0.5 g) ground cumin

  • 1/4 tsp (0.5 g) cayenne pepper

  • 1 avocado, chopped

  • 1/2 small red onion, thinly sliced

  • 2 tbsp (2 g) cilantro, chopped

  • 6 grain free tortilla wraps (such as cassava flour)

  • 1 1/2 cups (360 g) canned black beans, drained

DIRECTIONS

  1. In a medium skillet, warm avocado oil. Add garlic, shrimp, salt, pepper, cumin, and cayenne pepper. Cook for 2-3 minutes on each side, flipping once.

  2. In the meantime, cook black beans over medium heat in a small sauce pan for 5 minutes.

  3. Warm tortillas in microwave for 10 seconds.

  4. Fill tortillas with shrimp, avocado, red onion, and cilantro.

  5. Serve shrimp tacos with a side of beans.
